After Arnie’s Bagelicious, Sebastian was a hungry, entrepreneurial, driven foodie. In 1996, Sebastian Rametta partnered with George Naddaff, the founder of Boston Market to acquire Ranch*1 Group, Inc., an innovative, New York City-based grilled-chicken restaurant company. Naddaff was the “chicken man” and the franchising guru of his generation. Ranch*1 was focused on grilling marinated fresh chicken breast on proprietary grills directly in front of the customer. This provided guests with a healthier protein and a dose of theater. One piece of fresh grilled chicken breast was left whole for sandwiches, sliced julienne for salads, pastas and rice bowls, and diced for fajitas and burritos. Rametta’s direct experience in the kitchens of all the national chains during his bagel days lead to this creation of a diverse menu with only one protein, that could be served fresh to the guest in under 45 seconds! David Sculley, former President of Heinz USA, became the Ranch*1 lead investor. Faced with a growing need for over 30,000 lbs. of sliced and marinated chicken breast weekly, Rametta went to their main supplier, Frank and Jim Perdue, to develop a method for Perdue to slice the chicken for them. Perdue installed special cutting machines and began delivering sliced breast to Ranch*1 stores which increased consistency, reduced labor and food costs. These sliced breasts are now available in supermarkets across the country and account for over $500 million in grocery sales. Sebastian has a natural skill to collaborate with the right partners for innovative yet simple needs in order to generate more sales. Naddaff and Rametta were selected as Ernst & Young NY Entrepreneurs of the Year for Ranch*1 in 2000. Today, the Ranch*1 brand is owned by Kahala, a multi-brand franchise company with over 4,000 franchised restaurants.
